Rigatoni 6 oz
Shrimp 3 each
Chopped Garlic 0.5 tsp
Large Diced Tomato 1 oz
Chopped Basil 1 leaf
Butter 0.5 oz
White Wine 1 oz
Ricotta 2 oz
Arugula 1 oz
Salt & Pepper to taste

Preparation Instructions

1. In a large 6 qt pot, fill with 4 qts of water.
2. Place water on stove and turn on flame to high.
3. Cover pot.
4. Bring water to a rolling boil.
5. While water s boiling, chop garlic into very small pieces. Set aside
6. Wash tomatoes with cold water and dice tomatoes into large dice, 1 inch square, Set aside
7. Chop washed & Dried fresh Basil into small pieces. Set aside
8. Clean shrimp, remove shell and tail, de-vain and wash shrimp with cold water. Set aside
9. Wash Arugula with cold water, drain and set aside
10. Remove cover carefully releasing steam away from you
11. Add 1 tbls of salt to water.
12. Add pasta to boiling water, stir gently.
13. Return to a boil, stirring occasionally.
14. Cook for 10 to 12 min until tender.
15. Remove from heat and drain pasta well.
15. Place saute pan on stove and turn on stove to med / high
16. Add butter to pan and melt, add garlic to pan with butter and saute until lightly brown
17. Add Shrimp. Cook for about 1 min. Then turn Shrimp and cook for 1 min.
18. Add diced tomatoes, chopped basil and White Wine
19. Cook for 5 min.
20. Remove saute pan from heat and turn off flame
21. Add drained hot pasta to saute pan.
22. Add Ricotta Cheese and Arugula
23. Toss and stir together.
24. Spoon onto place and serve.
