Bucatini 6 oz
see Amatriciana Sauce below 10 oz
Amartriciana Sauce
Olive Oil 1.5 tsp
Diced Onion 1 oz
Diced Bacon 1.5 oz
Chopped Tomato 1 oz
Chopped Roasted Peppers 0.5 oz
Butter 0.5 oz
White Wine 0.5 oz
Chicken Stock 1.5 oz
Basil (Chiffonade) 1 leaf

Preparation Instructions

1. In a large 6 qt pot, fill with 4 qts of water.
2. Place water on stove and turn on flame to high.
3. Cover pot.
4. Bring water to a rolling boil.
5. While water s boiling, Dice Onions into small pieces. Set aside
6. Wash tomatoes with cold water and dice tomatoes into small dice, 1/2 inch square, Set aside
7. Roll washed & Dried fresh Basil and slice into strips. Set aside
8. Chop Roasted peppers into small pieces. Set aside
9.Dice bacon intro small pieces and set aside
10. Remove cover carefully releasing steam away from you
11. Add 1 tbls of salt to water.
12. Add pasta to boiling water, stir gently.
13. Return to a boil, stirring occasionally.
14. Cook for 10 to 12 min until tender.
15. Remove from heat and drain pasta well.
15. Place saute pan on stove and turn on stove to med / high
16. Add oil to pan, add onion and bacon to pan and saute until brown
17. Add tomatoes, roasted peppers, basil and butter. Cook for about 1 min.
18. Add chicken stock and White Wine
19. Cook for 5 to 6 min.
20. Remove saute pan from heat and turn off flame
21. Add drained hot pasta to saute pan.
23. Toss and stir together.
24. Spoon onto plate and serve.
